Ingredients
- 5 1/3 tablespoons unsalted butter (room temperature)
- 2/3 cup sugar
- 1 1/3 cup flour
- ¾ teaspoon salt
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- 2 large eggs slightly beaten (room temperature)
- 3 very ripe bananas
- ½ cup coarsely chopped nuts like pecans
Preheat oven to 350°F.
In a large bowl, beat the butter and sugar on high speed until lightened in color and texture.
In medium bowl, mix flour, salt, baking soda and baking powder. Beat the flour mixture into the butter/sugar mixture until blended and the consistency of brown sugar. Gradually beat in the eggs.
Fold in the bananas and nuts just until combined.
Bake in loaf form for 50 – 60 minutes.
