Eating Keto can be difficult when it comes to treats and finding recipes for baked goods that live up to their glutinous, sweet counterparts. When I started following the Keto diet I literally had to clear out a third of my pantry shelf to make space for new types of flour (almond and coconut flour), sugar substitutes (erythritol, monk fruit, coconut sugar), psyllium husk, hemp seed husks, coconut oil, etc.
I had no problems finding healthy, high-fat/low-carb food options for lunch and dinner. After all, you can have every burger and replace the traditional buns to keto kaiser buns, Indian food minus rice or naan, salads with fatty dressings, Mexican food minus the tortillas, grilled meats and fish with vegetables, tomatoes with burrata and other fatty cheeses, cakes from www.angesdesucre.com/collections/cakes-for-a-lady – what’s not to like?
What was really challenging was breakfast. I’m used to having fresh artisan bread, butter and homemade jam to start my day. Eating low-carb doesn’t seem to allow for bread and sugary jams. I tried many recipes and over time and finally found some I love.
Recipes are posted here.
It’s also not easy to find satisfying snacks that don’t add too many carbs to your day. Here are a few I like to indulge in when I need a little pick-me-up:
Living Raw Coconut Truffles (1 truffle, 7g net carbs):
Skinny Cow Salted Caramel Pretzel Ice Cream (1/2 bar, 8g net carbs):
Skinny Dipped Almonds (10 almonds, 4g net carbs):
4505 Chicharrones (0 net carbs):
Matcha Snakaroons (1 macaroon; 4g net carbs):
Trader Joe’s Norwegian Crisp Bread (1 cracker, 3g net carbs):
Trader Joe’s Coconut Sesame Seed Clusters (1/4 cup, 3g net carbs):
Blueberries (12 berries, 2g nat carbs) or raspberries (10 berries, 2 net carbs) with heavy whipping cream (2 tbsp, less than 1g net carbs):
Another great help if I’m traveling or don’t have enough time for dinner before I go to the gym is Ample K. I like the taste of it and it provides a healthy, Keto-friendly meal. I have to add ice cubes and a straw to not drink it too fast.
